Kesari Sabudana Kheer/ Sago Pudding

 

About the Recipe: In India, sago is also known as sabudana and has a long history in traditional Indian medicine. According to “The New Oxford Book of Food Plants,” traditional Indian medicine uses sago in combination with rice to cool the body. This is also a low calorie food. You can also serve this recipe to the toddlers, it’s a great source of calcium ( avoid using dry fruits if you are preparing it for your little munchkin ;), it might be difficult for her to chew ) So try this amazing recipe. 🙂

 

INGREDIENTS:

  • Sago: 1/2 cup ( soaked for 2-3 hours)
  • Milk: 1 Litre ( Full Cream)
  • Green Cardamom Powder: 1/2 tsp
  • Dry Fruits: Any of your choice ( I used raisins, almond, pistachios)
  • Sugar: 1/2 cup
  • Saffron: 15-20 strands

 

METHOD:

STEP 1: Heat Milk in a saucepan until its first boil.

STEP 2:  After first boil, strain the Sago and add to the boiling milk. Bring flame to medium heat and keep stirring occasionally.

STEP 3:  When bubbles starts forming at the surface of vessel add raisins, cardamom powder, saffron, almonds ( dry fruits of your choice ). Mix well and cook for 5-6 minutes.

STEP 4:  Now, add Sugar; mix well and further cook for 5-6 minutes or until you reach your desired semi liquid consistency.

STEP 5: Dish out, garnish and serve HOT or COLD whatever pleases your taste buds ;).
